The domaine's vineyards are situated on diverse soil types—Kimmeridgian, Portlandian, and white clay—each contributing unique characteristics to the wines. Committed to expressing the true essence of Chablis, Guillaume employs meticulous viticultural practices, including the use of indigenous yeasts and careful timing of harvests to ensure optimal grape maturity. The wines are primarily fermented in stainless steel tanks, with some parcels aged in oak barrels
to enhance complexity.
